Firefighters were called just before 6:45am on Saturday morning to a fire involving a deep fat fryer in a hotel on West Quay Road, Southampton.
The six-floor building was evacuated as HIWFRS tackled the fire using breathing apparatus, jets and hose reels, with ventilation fans in use to clear smoke.
Crews were gradually released with two fire engines remaining on the scene until the stop message came in at 07:34.
